Peel the outer leaves away to find the highly prized ‘ball’ inside. Eat the young leaves in tossed salads, and use cooked leaves similarly to spinach in stir-fries and quiches.
Cultivation Advice Chicory Red Ball
* Sow thinly 13mm deep under protection in February to April for earliest harvest in summer, or Jun to August outdoors to harvest Oct-Dec.
* Sow under glass for all year round fresh ‘salad leaves’.
* Keep weed free and well watered.
* In late autumn when temperatures fall, the outer leaves will close together tightly to form heads and the colours will intensify.
* To remove bitterness boil or steam the leaves or fresh leaves add zest to a mixed salad
